Fresh Tomatillo Salsa Verde

Salsa Fresca de Tomatillo

If you like your salsa hot and sharp, you will enjoy this recipe for a fresh tomatillo salsa verde. Uncooked tomatillos are quite acidic and when you add 4 serrano chiles, seeds and all, your salsa is gonna pack some punch.

The flavor stands up well to grilled beef. Try it with some killer carne asada. Provecho!

Fresh Tomatillo Salsa Verde

How to Prepare

Since this is an uncooked salsa, you will only need a few minutes to prepare it. Start by removing the papery husks from the tomatillos. Then rinse the tomatillos under running water to remove the sticky film.

Finely chop the onion and cilantro. You can use the stems of the cilantro.

Chopped Cilantro and Onion

Blend the tomatillos, serrano chiles, garlic, water, and salt until smooth. Pour the blended tomatillos into a serving bowl. Add the chopped onion and cilantro and stir. Add more salt if needed.

Fresh Tomatillo Salsa Verde Recipe

The uncooked tomatillos are quite acidic and when you add 4 serrano chiles, seeds and all, your salsa is gonna pack some punch. The flavor stands up well to grilled beef. We love this salsa with carne asada. It's also a great salsa for grilled chicken.

Ingredients

  • 1 lb. tomatillos
  • 4 serrano chiles
  • 2 cloves garlic
  • 1 cup cilantro
  • 1 cup water
  • ½ white onion
  • 1 tsp. salt + to taste

Instructions

  • Finely chop the onion and cilantro.
  • Blend the tomatillos, serrano chiles, garlic, water, and salt until smooth.
  • Pour the blended tomatillos into a serving bowl. Add the chopped onion and cilantro and stir. 
  • Adjust the salt as needed.

Notes

Prefer a milder salsa?
This is a very hot salsa. Use 2 serrano chiles or even 1 instead of 4 if you prefer a milder salsa.
Let the Salsa Rest
If you have the time allow the salsa to rest for 30 minutes so that the flavors meld.

    Salsa was too thin,had to cook a long time,uncovered,to th thicken!

      This is a raw, or fresh salsa. There is no cooking.

      The salsa is too thin! Too much water. It only needs 2-3 tablespoons of water, not 1 cup!

    Way too much water!!!
    Maybe 1 to 2 TBSP and definitely not 1 cup!!!! You will see a lot of liquid on the bottom of a lot of water is used. No cooking needed or required!
    Recipe is delicious though!!! We did use 4 peppers but took all the seeds out and not Spicy at all.

    In my last batch which is almost identical to yours, I added a poblano (I had a lonely one staring at me on the counter), used jalapenos instead of serranos, and added 5 habaneros. This was very spicy, just the way we like things around here. For some reason tomatillos never seem tart to me so I always add lime juice. This was a larger batch so I split it and cooked half so I can enjoy the salsa 2 ways! Salsa verde is so easy to prepare! You really don’t need measurements, just the basic ingredients and you’re good to go!
