About the Founder
I’m Douglas Cullen and I created the Mexican Food Journal to share my love for Mexican Food. I have been a resident of Mexico for 20 years over which I have grown to love Mexican cuisine. Currently, I am the former owner of restaurant in San Miguel de Allende, Mexico. I am an excellent cook and teacher. The Journal combines two of my passions, cooking and teaching. Prior to opening coffee shops and restaurants I was a university language professor.
It makes me laugh now but I didn’t always love Mexican food. For the first half of my life I wouldn’t eat Mexican food. Too hot! Any dish with even a hint of chile was too hot for me. Not any more! Now I can’t get enough of Mexican food. The intensity of the flavors and the diversity of the dishes keep me wanting to experience more.

I want you to know that there is much more to Mexican food than just chiles and hot sauce. Did you know that Mexican Cuisine is listed by UNESCO as Intangible Cultural Heritage and that the only other country to receive this recognition is France? Mexican cuisine is sophisticated with centuries of history and tradition.
